Detecting strange fluctuations when measuring oven temperature using TC-08 in combination with type-k thermocouples

Within our organization, we measure the temperature of our ovens using the TC-08 in combination with type-k thermocouples. Currently, we perform this measurement, for instance, through a laptop connected to the TC-08, and it displays accurate values.
Recently, we've been attempting to do this using a mini-PC located behind the oven. We've connected the TC-08 with sensors to the mini-PC and started measuring the temperature. However, when attempting to measure the temperature via the mini-PC, we are encountering unusual values. The values fluctuate significantly, even on TC-08 connections where no thermocouple is connected at all. It seems like there might be some interference or a disturbance.
