TC-08 channel insulation and noise from metal

I have used TC-08 to measure temperature. When I fixed the thermocouple to somewhere with an aluminum tape, the temperature of not only the channel but also other channels fluctuated in the same pattern.

1. Is each channel not insulated?
2. If the thermocouple is attached to metal (whose temperature might be not homogeneous), does the metal generate noise no matter what data logger I use?

I do not have much knowledge about this field. I am happy if you help.
