Data logger suitability query

Hi All,
I am wondering if it is possible to use a data logger to interpret a signal from either a photovoltaic cell or LED and sensor. I am hoping to pass material past a sensor, when the material passes the sensor it interrupts the light source and a signal can be generated. Is there a data logger suitable with the software to receive and analyses the signal :?: Ideally I need a minimum of three inputs into the logger with an ideal number of five inputs/sensors.
Any help would be greatly appreciated

Hi Mike,

How long do you need to capture data for and at what sampling interval?

What is the output voltage of your sensors?

You may wish to take a look at the PicoLog 1000 series (http://www.picotech.com/multi-channel-daq.html) or the ADC-20/24 (http://www.picotech.com/precision-data-acquisition.html).
