New to data logger question

Hi,

I'm have searched the site and think the answer is yes, but before I purchase I'm looking for confirmation.

I am after a multichannel k-type data logger for my dissertation on flammability of emollient textiles (to do with fire investigation)
I can buy an legacy TC-08 RS232.
My question is would this work with a serial to usb adapter on a modern laptop?
Would it provide a live temperature for the thermocouples?

My understanding is that the latest software would still provide a graph that could be analysed for results and reporting.

I can't justify the purchase of a new one for what will be very occasional use.
