To measure temps of beverages moving through heat tunnel

Hello I work in a beverage industry, and I have to investigate the temperature of beverages moving through a heating tunnel to be shrink wrapped, as well as the temperature of the tunnel itself. The problem is that there may be sudden uncontrolled peaks in temperature that is causing heat damage to the caps and finishes, at sporadic times, but this has not been proven. I believe I will need dataloggers that are capable of being immersed in beverage on its passage through the tunnel, as well as that can measure temperature in the tunnel over a period of about a month.

What do you suggest, and what is the best way to carry out this investigation?
