SBC or NUC for 2204A?

I need a basic SBC or NUC to run a 2204A in order to acquire and display the signal from a seismometer.

The seismometer outputs +/- 10V at frequencies from 0.01 to 10 Hz. I want to be able to trigger the scope and hold the waveform on the screen until the next trigger.

I need to display the waveform on a HDMI monitor.

Any suggestions on which SBC or NUC to get?
