unstable temperature readings

I'm currently using TC-08 with type T thermocouple to record the the temperature increase of my product mix when it sets. The problem is, occasionally the temperature readings are unstable and fluctuate between 300 to -300 deg. I'm just wondering if the presence of water influences the readings because the temperature showed normal increase when I dry-tested it by wrapping the end of termocouple with my palm. But when it's immersed in a watery mix, the readings run haywire. Please advise. Thanks.

Thank you for your post.

It sounds like this might be a grounding issue. If the TC-08 is unable to get a good ground then it is possible that it will fluctuate as you describe. To get round this you can ground the unit itself by connecting the outer casing of the RS232 port to ground. This should settle the readings down again.
