Help on picking logger

I am looking to log data for two specific applications
(1) I will be using a piezoelectric pressure sensor with the voltage output shown in the figure below. I looking at a single channel will a low sampling rate, entire event takes about 1-2 seconds.

(2) This will involve a strain gage with a resistance of 350 ohms, I will need to measure resistance changes over a short period of time, entire event here lasts for 0.5 to 1.5 ms
