Accuracy of submersible 1/10th DIN probes

I need a little help in putting together a probe/meter set to achieve the following measurements.

Probe must be submersible to a depth of ~80mm (water)
Accuracy of ±0.1 °C or better
Sampling rate of at least 4 Hz

I purchased one of your systems several years ago and it worked well. Now with a new company and new application. Hope you can help me out here too.

Hi Phil,
The 1/10 din PT-100 probes are as accurate as you wish (+/-0.1 degrees C). They are in a stainless steel sheath 130mm long so would be water-proof to that depth if inserted from the top. The actual temperature sensitive area is right at the tip. When used with our PT-104 platinum resistance data logger, the fastest sample rate is 720mS. I doubt that any faster would be usable, the thermal lag of the sensor would mask any difference.
