Hi,
Having collected data using the wrong probe settings I now want to change the custom probe settings for the collected data. i.e. rescale the collected data. Is it possible to allocate a new custom probe and have PicoScope rescale already collected data?

Unfortunately, this is not possible. The saved waveform can only be displayed as it was saved.
