Hi Jeff,
I assume you meant the ADC-16 here, as the ADC-216 does not measure differential signals (it has two single ended, common ground channels).
In the ADC-16, the voltages are combined on the analogue side of the ADConverter, therefore the accuracy in differential mode is the same as the accuracy of the single-ended mode of operation - ie ±0.2%.
